  3. Berries are added to the boiling starch base... It is better to wipe them in jelly through a sieve or replace them with freshly squeezed blackberry juice.

Only then can the cake be removed from the mold.


Cooking a pie with berry filling is also inconvenient because the dough itself, when wet, is not baked and does not increase in volume. For preparations for the winter, only fresh, whole and unspoiled ones are suitable. A soft and lethargic berry is best used for summer compote. Crumpled can still be suitable for preparations for the winter, in the recipes of which it must be crumpled or grinded.

The blanks should be packaged only in carefully washed and sterilized jars, which are closed with lids prepared with no less diligence. Store the finished product in a place prepared for this, dark and cool. If the workpiece is rolled up hot, the container with it is turned upside down, wrapped in something warm and dense (a towel, blanket, etc.) and only after cooling to the temperature in the room is hidden for storage.

This method of cooking for the winter allows you to almost completely preserve the vitamins and minerals that blackberries are rich in, and, therefore, the beneficial properties of its berries. Therefore, if the main purpose of the preparation is medical and recreational, it is best to freeze the blackberry. You can freeze only whole, firm and strong berries, even if they are a little unripe. Therefore, the prepared blackberries should be carefully sorted.

There are 2 ways to freeze blackberries. Most preferred in the freezer compartment using the quick freeze function. The berries must be laid out in 1 layer on a clean cutting board, which is then placed in a chamber, where we set the minimum temperature. After an hour, the blackberries will freeze, and they must be transferred to plastic containers or plastic bags, and then, already packaged, returned to the freezer.

To freeze in the second way (by immediately placing the berries in a container), more bags or containers will be required. Here it must be borne in mind that the fruits cannot be re-frozen, and therefore, having thawed a portion of blackberries, it will have to be used all - cook and eat right away.

For 1 kg of fruit, you should take 1–1.5 kg of sugar - depending on how sweet the finished product should be. Fruits are covered with sugar and thoroughly rubbed together with a wooden crush until a homogeneous mass is obtained. Then the resulting mixture is left to infuse for 12 hours in a cool place. After that, making sure that the sugar is completely dissolved, the jam is thoroughly mixed again with a spoon and, spreading over the jars, closed with plastic lids or rolled up with metal ones.

Blackberry jelly is a delicious and at the same time easy, light dessert that will serve as an excellent end to any meal. To prepare it for the winter, you can use the following recipe. You will need:

  • blackberries - 1 kg;
  • lemon (larger) - 1 pc;
  • sugar - 2.5 kg;
  • gelatin - 70 g;
  • water - 2 glasses.

Place the prepared berry in a cooking container, fill it with water, and then fill it with sugar. Mix everything, put on the stove and, heating to a boil, cook until the fruits become soft. Then we wipe the resulting mixture through a sieve, add juice squeezed from lemon and gelatin diluted in water to it. Then we mix the future jelly and put it on the stove again.
