I suggest cooking potatoes stuffed like cabbage rolls in a cauldron (thick-walled pan). This is the first and second course rolled into one. You can use any meat, I used pork and beef. And you can stuff any vegetables this way, which gives a lot of scope for imagination.

Let's prepare the minced meat. To do this, grind the meat in a meat grinder along with onions, a clove of garlic and half a carrot. Carrots add a pleasant shade to the minced meat, add sweetness and additionally clean the meat grinder))

Chop various greens and add to the minced meat. I used cilantro, green onions, parsley. Mix everything until smooth, salt well and add some spices.

Let's prepare the vegetables for stuffing. In addition to potatoes, I also took bell peppers. It will add a special taste to the dish, but you can do it without pepper, whatever you want. I used a special knife to make holes inside the potatoes. Such knives were sold in my childhood, but I was lucky enough to buy this one last year, in Ukraine. If there is no such knife, then the pulp is removed with a sharp-edged teaspoon. The bottoms of the potatoes should be cut off so that the potatoes can stand easily. The resulting spirals can also be welded.

Stuff the potatoes and peppers with the resulting minced meat.

Meanwhile, heat the vegetable oil in a cauldron or saucepan and fry the onions and carrots in it. Add garlic, spices, salt.

Dilute tomato paste with water and add to fry. I always add a spoonful of sugar to neutralize the acid. Fry everything together for 5 minutes. Add the remaining garlic and spices.

Place the stuffed vegetables in the frying pan, trying to place them vertically and side by side.

Pour boiled water over the vegetables, level with the minced meat. Add salt well and cook until the potatoes are ready, about 30 minutes. The acid will prevent the potatoes from boiling. It is necessary to taste the dish while cooking and add what is missing - spiciness, salt or sweetness.

When the potatoes become soft, the dish is ready. Sprinkle it with herbs and serve. You can serve it in deep plates, as you get a lot of gravy.

We need:

  • 10 medium-sized potatoes, equal in size
  • 1 can canned white beans
  • 100 g feta cheese or cheese
  • 2 cloves garlic
  • dill, onion
  • 100 g hard cheese

Preparation:

1.Wash the potatoes, wrap each one in foil, and bake for 1 hour in the oven at 180 degrees.

2. While the potatoes are baking, prepare the bean sauce. drain the brine from the beans, do not pour it out; it will be useful to us. Place the beans in a blender glass. Add chopped feta cheese and 1.5 tbsp. brine. Mix everything until you get a homogeneous paste.
Squeeze the garlic through a press into the mixture and combine with finely chopped herbs, mix.


3. Slightly cooled potatoes, cut in half and remove the core, make boats.

Potatoes can be cut directly in the foil, they will be like in plates, and the skin will not tear while we take out the middle.

4. Finely chop the removed center, 2/3 of it will be used for filling. Mix it with the sauce, mix everything thoroughly and stuff the boats. Sprinkle grated cheese on top.

Potatoes stuffed with bacon and mushrooms


We need:

  • 3 potatoes, large
  • 1 tbsp. sour cream
  • 1 tbsp. mayonnaise
  • 80 g hard cheese
  • 100 g champignons
  • 100 g bacon (lard)
  • 1 piece of onion
  • salt, ground black pepper, to taste
  • vegetable oil

Preparation:

1. Wrap the prepared potatoes in foil and bake in the oven for 1 hour, temperature 180 degrees, or you can boil them in their skins, but do not overcook them, check with a skewer.

2. Cut mushrooms and onions into small pieces and simmer in a frying pan.


3. Bacon or lard is cut into thin, small strips and fried in a frying pan until golden brown.

4. Cut the potatoes into two parts and select the core, you can do this with a spoon or tools. We make boats.

5. Remove the core and mash it into puree.
