The pulp of the ripe fruit is tender, similar to cream in consistency and tastes like butter with nuts. An avocado that is too hard is unripe, but it’s worth buying to ripen at home. The pulp of the unripe fruit is strong, similar in taste to pumpkin or pear. Like bananas, avocados ripen in the warmth of a room in a couple of days. You can speed up the process by wrapping the fruits in the same paper bag with ripe apples. When the fruit is ripe, it can be stored for no more than 5 days, otherwise it will darken and spoil. The ripe fruit is dark green and pear-shaped - the Californian or Florida variety is good for salads.

To use the fruit as a salad additive, it must be peeled. Cut in half, remove the pit by prying it off with a knife. The halves are cleared of the pulp with a spoon, which can be cut into cubes or given a creamy consistency. Another peeling option would be a method similar to peeling a potato or slicing the skin from top to bottom and removing it in strips.

Avocado in salads should not be cooked, because otherwise it will release bitterness. It must be prepared immediately before use to prevent it from oxidizing.
