Chokeberry (chokeberry) is a very useful berry, but, unfortunately, it is not as popular in our country as it deserves. Of course, gardeners grow it on their plots, but they mainly prepare jam from it or add it to compotes for a beautiful color.

I confess, I myself recently thought where to attach it when I was presented with a bag of chokeberry! I never cooked morse from it and, it turned out, in vain! I haven’t tasted such a fragrant and tasty drink for a long time! Chokeberry is a tart berry and I added quite a bit of cranberry for sourness.

Ingredients for 6 servings

  • Water 1.5 l
  • Frozen cranberries 100 g
  • Rowan black-fruited 300 g
  • Sugar 5 tbsp. l.

Step by step

  1. For fruit drink we need chokeberry, cranberry and sugar. Let's sort out the berries and wash them.
  2. Puree chokeberry and cranberries with a mixer.
  3. Strain the puree through a sieve and strain the juice into a cup. We do not throw out the cake.
  4. Fill the berry cake with water. Put on fire and bring to a boil. Collect the froth, add sugar and simmer for 10-15 minutes. Turn off the heat and let it brew and cool for 0.5 hour.
  5. Strain through a sieve, although you can just carefully drain, as the cake will settle to the bottom. Add squeezed juice to the saucepan to the berry broth. Morse is ready. It can be drunk hot or cold.

Morse is a wonderful and healthy drink, known for a long time. If the cooking technology is followed, all vitamins are preserved, since it is not boiled. Any berries (lingonberry, cherry, strawberry, etc.), including chokeberry, are suitable for fruit drinks. Blackberry fruit drink turns out to be very fragrant, with a tart taste, sugar is put to a minimum, since the blackberry is a rather sweet berry. It is better to drink fruit drinks chilled, if there is no time, then you can put a few ice cubes in the decanter.

The word "mors" has Byzantine roots, where water with honey was called mursa. So "mursa" was transformed into the well-known "fruit drink".

For fruit drink, sort out the chokeberry, cut off the branches and wash well.

Fold in a blender and beat until puree. Chokeberry is a thick-fleshed berry, so you can add 3-4 tablespoons of water to a blender.

Strain the chokeberry juice through a strainer to get rid of the pulp flakes and skins.

Add sugar to the resulting fruit drink to taste, mix until completely dissolved and put to cool in the refrigerator.

Dear friends, I haven't shared recipes for delicious drinks with you for a long time. Today I decided to rectify this situation, especially since there is a reason - I recently picked chokeberry berries from a bush. Honestly, not the most favorite berry in our family. But the bush grows, then let it grow.

Fresh berries are not particularly good for eating - they are very dry and tart. I tried compotes from it, and jam, and sugared with whole berries - all this did not go well with us.

Then I decided to make fruit drink from it, everyone liked it. Of course, chokeberry is a difficult berry. It is not useful for everyone, and not everyone is recommended it, but I think that sometimes you can afford a glass of such fruit drink if you still feel good.

This fruit drink can be prepared from frozen or fresh chokeberry. But since it is stored for a long time, I do not freeze it, but I prepare a wonderful drink from this black berry according to the following recipe.

Wash the berries well, and then grind until mushy. I did it with a blender, but if you don't have one, then use a regular meat grinder.

Add half a glass of sugar to the resulting berry mass and leave everything for several hours until the mountain ash lets out the juice.

In this form, I set aside the crushed mass and went to do household chores, and began to prepare the fruit drink after four hours.

Chokeberry contains: vitamins C, P, K, E and group B, iodine, iron, copper, manganese, selenium, fluorine, boron, potassium and molybdenum, as well as glucose, fructose and sucrose.

We take half a lemon, remove the zest from it and squeeze out the juice.

Add everything to the chokeberry. We pour in one and a half liters of water. We put on fire and bring to a boil. As soon as it starts to boil, turn it off. Let the drink brew for 20 minutes.

After that, pour it into a jug or jar, where it will be stored, but this must be done through several layers of gauze so that the fruit drink is clean without peel and pulp.

Chokeberry lowers blood pressure, strengthens and expands blood vessels, increases their permeability.

As a matter of fact, the fruit drink is already ready, but you should try it first. Add sugar if needed. For me, it tastes a little harsh, so I also added boiled water.

Chokeberry should not be consumed by people with high acidity, stomach and duodenal ulcers, with increased blood clotting and thrombophlebitis.

As a result, the fruit drink turned out to be very tender, sweet, with a slight sourness and astringency. It is simply impossible to break away from him, I was thirsty and thirsty. For some reason it seemed to me that it was in the warm form that he especially revealed his taste and aroma.

Scandinavian legend says that the first woman was created from mountain ash. These healthy berries are shrouded in many legends, which will take more than one day to read. It is enough for us to know that mountain ash is useful for colds, respiratory diseases, as the prevention of cancer and much more.

There is no particular difference between chokeberry and red mountain ash, except that chokeberry is considered a more cultivated variety. It is no less useful than red, but for the preparation of juices, compotes and fruit drinks, chokeberry is more convenient. It is not as hard as its red cousin, and gives much more juice.

Red and black chokeberry can be mixed, and prepared rowan fruit juice for the winter according to the same recipe. Rowan ripens by the beginning of autumn, but it is better to wait for the first frost. After that, rowan acquires greater sweetness, astringency, and becomes more intense.

To prepare fruit drink you need:

  • 0.5 kg of mountain ash;
  • 2 liters of water;
  • 100 grams of sugar, or honey.

In fact, this is an approximate dosage, and you need to select the amount of one or another ingredient individually.

Wash the berries and pick them off the twigs. If there are a lot of rowan berries, pass the berries through a meat grinder, or pound them with a blender if there are few berries.

Put the mountain ash puree in a sieve, let the juice drain and squeeze out some cake. The cake can be grated with sugar and get "live jam", or made. If you do not like jam, pour the cake with cold water, add sugar and put it on low heat.

Bring the water to a boil and boil for 3-5 minutes, then cover the pan and let the cake brew for 5-6 hours.

Strain the broth, mix it with the juice, and the fruit drink is ready, you can drink it warm, or with ice cubes. In order to preserve the rowan fruit juice for the winter, it should be additionally pasteurized.

Put a saucepan with rowan fruit juice on the fire, bring it to the stage "is about to boil", but do not let it boil for 3 minutes. After that, turn off the heat very quickly, pour the rowan juice into bottles, and seal them with corks.

It is not worth pasteurizing the rowan fruit drink for more than three minutes, otherwise, most of the vitamins contained in the rowan will die.

If you are not sure that such pasteurized fruit drink is healthy, freeze fresh rowan berries in the freezer and prepare fruit drinks as needed.

5. Reduce heat to low, cook the cranberry-black fruit juice for 10 minutes, when using dried blackberry, cook longer - until the berries are soft.
6. Remove the pot of fruit drink from the stove.
7. Remove the berries from the fruit drink with a slotted spoon, transfer them to a sieve.
8. Using a spoon, grind the black chops and cranberries into mashed potatoes.
9. Transfer the puree from the berries back to the saucepan.
10. Place a saucepan with fruit drink over medium heat, let it boil.
11. Boil fruit drink for 1 minute.
12. Remove the fruit drink from the burner, open the lid, let the fruit drink cool to a warm state.
13. Put honey in a saucepan with warm (but not hot) fruit drink, mix or put honey in a warm fruit drink already poured into cups.
