Recently I baked for my family, following a recipe from a German magazine from Elena Pchelintseva. Today’s post is about this, but I will call my work not a pie, but kefir cake with sour cream, it seemed so airy and tender to me!

Kefir biscuit dough is not difficult to prepare. The eggs and sugar were beaten quickly, so I want to note that anyone can make kefir dough for the cake!

Recipe recipe for quick kefir cake I left the same:

  • 4 eggs,
  • 500 g sugar,
  • 500 ml kefir,
  • 500 g flour,
  • 2 packs of vanillin,
  • 1.5 small packets of baking powder.

Often you have to answer questions: how much flour or sugar is in one glass?

For reference:

in one 250 ml tea glass - 160 g of wheat flour and 200 g of sugar,

in one 200 ml tea glass - 130 g of wheat flour and 160 g of sugar.

Preparing a kefir cake:

Beat eggs and sugar with a mixer or whisk. The amount of sugar on the eggs is quite large, so they are beaten quickly, no more than 7 minutes.


Don’t worry, sponge cakes made with kefir will not be cloyingly sweet; the sweet taste will be diluted by half a liter of kefir. Kefir is poured into the beaten eggs at a slow speed, vanillin and baking powder are also added there. Next, take a spoon or spatula and gradually add flour, continuing to stir. The consistency of kefir cake dough is similar to pancake dough.


You can make a lot of kefir dough! That's why I was afraid to bake it in a round pan. I had a deep baking sheet with 5 cm sides (it is slightly smaller in size than a regular baking sheet), so I used it. She lined it with oiled paper and poured in the dough for the kefir crust. While you are whipping the dough, do not forget to turn on the oven so that it warms up thoroughly. The kefir sponge cake is baked in the oven for 25-30 minutes at 180 degrees. This is how I got the ruddy base for the kefir cake!


Be sure to cool the cake, then you can easily cut it lengthwise for soaking. The top of the cake was shaped like a lump, so it was convenient for me to cut the cake upside down. Look how porous the kefir sponge cake is!


I coated its halves with sour cream and left it to soak for 10 minutes. Then I applied more sour cream to the bottom cake layer and combined it.


Then I coated the top and sides of the kefir cake with cream.

For sour cream it took me

  • 500 g sour cream and
  • 1.5 cups sugar.

To decorate the kefir sponge cake for this recipe, I used multi-colored coconut flakes. It turned out kefir cake with a light coconut flavor and vanilla aroma. Great taste!

When cut, the cake pieces turned out so snow-white! Help yourself!

Recipe for two-color kefir cake with sour cream

The striped cake that we will now learn how to prepare consists of:

two glasses of flour; three eggs; glasses of kefir; 1 teaspoon cocoa; half a teaspoon of soda; 0.3 kg sugar; half a kilogram of sour cream (the fat content of the product must be at least 25%).

Procedure:

  1. Sift the flour.
  2. Pour it into a mixture of kefir, eggs, half the sugar and soda.
  3. Pour the resulting mixture into two bowls in half, add cocoa to one part and stir until smooth.
  4. Bake two multi-colored cakes in a hot oven for about half an hour.
  5. Check the doneness of the baked goods with a wooden skewer.
  6. Cool the cakes by placing them on a towel or a special wire rack. Then cut lengthwise into two parts.
  7. In the meantime, prepare the sour cream. You need to cool the sour cream and beat it with the rest of the sugar until fluffy.

Assemble the cake, alternating white and dark skins, spreading them in layers. I don’t recommend serving the kefir cake with sour cream to the table right away, it is not yet soaked.

Therefore, put it in the refrigerator and let it sit for at least a couple of hours.

Recipe: Kefir Cake

The pie, the recipe for which I give below, turns out airy and tender. To make it, prepare the necessary products in the specified quantities.

So take:

200 g sugar; three eggs; 350 ml kefir; 10 g soda; 2 cups of flour; a large spoon of cocoa powder and 5 g of citric acid. This is for the test.

Cream the cream from: 200 g of sugar and 400 g of fat sour cream.

For sprinkling you will need: tbsp. spoon of cocoa without a slide; a full tablespoon of sugar and 50 g of chopped nuts.

Let's start preparing the dessert by kneading the dough:

  1. Place sugar and eggs in a bowl. Beat the mixture thoroughly with a mixer, it should turn out airy and increase in volume.
  2. Add flour and knead the dough like pancakes.
  3. Divide it in half. Pour cocoa into one part, mixing it with half the soda and citric acid.
  4. Pour the kefir dough into a round mold and place in the oven, preheated to 175 degrees. Bake until done, do a dry match test.
  5. If your oven allows you to bake two cake layers at the same time, take advantage of this opportunity. Divide the dough in half when you have already added both baking soda and citric acid.
  6. You should end up with two cake layers: one light, the other dark. They need to be cooled by placing them on a towel, then cut horizontally into two parts.

Make a cream by whipping cold, full-fat sour cream with sugar or powdered sugar. You can flavor the layer with vanilla or almond extract.

When placing the cake on a plate, alternate dark and light cake layers, generously coating them with cream.

Leave a few spoons of cream to lubricate the surface and sides. Decorate the cake with a mixture of nuts, sugar and cocoa.

Place all these ingredients in the bowl of a food processor and grind until crumbly.

Allow 2-3 hours for soaking the cakes; the cake should be in the refrigerator during the entire time.

Recipe: Kefir Pie

By serving a delicious dessert, you will decorate the table and make tea drinking an unforgettable event. Some novice pastry chefs think that baking a cake or pie is difficult and painstaking work.

In fact, everything is much simpler than it seems at first glance. Having all the necessary products and equipment available, you can prepare a gorgeous cake in one hour.

Add to this time another couple of hours for soaking the cakes, and there will already be a cake on the table that will be enough for 10-12 people.

You will need: 3 eggs; 3 tbsp. spoons of cocoa; dessert spoon of soda; half a liter of kefir; 120 g sl. oils; 3.5 cups flour.

Cream: one and a half glasses of sugar; 3.5 cups high fat sour cream.

For decoration, take: bananas, cherries or strawberries.

Progress:

  1. In a bowl, beat granulated sugar with eggs.
  2. When the mass becomes fluffy, add soda and slightly warm kefir. Stir the mixture until bubbles appear on the surface (as in the photo). This means that the soda has been extinguished, and it’s time to introduce the remaining ingredients.
  3. Soften the butter and grind with cocoa, place the mixture in a bowl.
  4. Sift the flour and pour it into a bowl in parts.
  5. Pour the kefir dough onto a baking sheet lined with baking paper.
  6. The cake is baked at a temperature of 200 degrees. You can check for readiness by piercing the cake with a match or toothpick.
  7. After the cake has cooled, divide it crosswise into three parts.
  8. Place the pieces on a board or rectangular dish, generously greasing each of them with sour cream. The cream is prepared quickly and easily, if you have a mixer, you just need to beat the chilled sour cream with fine crystalline sugar.

The finished cake is decorated with banana slices, strawberry slices or peeled cherries.

Sour cream with kefir is an incredibly tasty and delicate homemade cake made from fluffy cake layers based on kefir dough and the most delicate sour cream. The cake is prepared surprisingly simply and quickly, even though all the cake layers are baked separately. You will spend a few minutes preparing the cream, but you will only need an hour to soak the cake. At the same time, the cake itself turns out to be so tender and incredibly tasty that your household will definitely ask you to return to this recipe again and again.

List of ingredients

  • eggs - 3 pcs
  • sugar - 2.5 cups
  • kefir - 1.5 cups
  • flour - 1.5 cups
  • slaked soda - 1.5 teaspoons
  • sour cream 25% - 700 ml
  • cocoa - 2 tbsp. spoons
  • vanillin - to taste
  • chocolate - for decoration
  • walnuts - for decoration

Cooking method

First, let's prepare the dough. To do this, beat the eggs with 1.5 cups of sugar until fluffy. Pour in kefir and add slaked soda. Mix well. Sift the flour and vanilla through a fine sieve directly into the dough base. Stir until smooth and divide the prepared dough into 3 equal parts. Add 2 tablespoons of cocoa to one part and stir until smooth. Bake each part of the dough in an oven heated to 180 degrees until ready, for 15-20 minutes and cool completely.

While the cakes are baking, beat the sour cream with sugar until fluffy. Chop the nuts and grate the chocolate. Place the cooled cakes on top of each other, sandwiching them with prepared sour cream. Grease the top of the cake with cream as well. Decorate the cake with chocolate chips and chopped nuts. Let it soak thoroughly and serve.

Sour cream with kefir is ready!

Cake is not the most necessary dish in our diet; moreover, it is not advisable to eat it often for people who are overweight, have health problems, etc. But! How sometimes you want something sweet in the evening, and with hot tea! This is where recipes for light desserts come to the rescue, not least of which includes kefir cake.

Kefir is a wonderful fermented milk product that is recommended for everyone, without exception, to consume, especially at night. Its benefits are beyond any doubt. However, there are times when kefir, not drunk on time, sits in the refrigerator for a long time and persistently asks you to make something useful out of it. Housewives in such cases, as a rule, prepare pancakes, forgetting that kefir can be used to make wonderful varied pastries: pies, muffins, bread, cake.
